Eat Drink Arel

The muffins are one of my favorites. They are made with zucchini and spelt flour, and are just barely sweet. I love them for breakfast or with a coffee as an afternoon snack. The recipe can be found here . 

I usually make a big batch and store them in the freezer so I can take them with me when I am rushing out the door (have I mentioned that I am one of those people who frequently have to run to catch the bus?). Dave isn’t a fan of these- I guess they are too far in the health food realm for him!
