It is much more fun to cook when you have animal friends to help you. Take it from me, I know. 

These were shots I took in the process of making ricotta cheese for the pizza Dave made for dinner tonight. If you have never had homemade ricotta before I highly recommend you give it a whirl. The nasty store bought stuff does not even compare. When we have ricotta in the fridge I eat it on everything- toast, crackers, egg sandwiches, pasta, grilled veggies. It is super creamy, and has the perfect balance of sweet/salty/sour. Not to mention it is is VERY easy to make. The only special equipment you will need is a candy thermometer. But you can buy them for $10 at Wal-Mart so that isn’t even a very good excuse.
